Baked thick, filled to the edge
A stuffed cookie only works if the filling survives the bake. Ours are built cold, sealed by hand and baked hot and fast so the middle stays molten while the outside sets.
That is also why we bake them in small trays and send them out the same week. A stuffed cookie that has been sitting for a month is just a biscuit.
